Hollowtech crank is a lot stiffer, thats a substantial upgrade, although they don't last as long as good square taper cartridges.
I'd guess it has slightly lower gearing.
XT. All round higher spec for being the premium model now.
Spyres are a big upgrade, with their downsides though.
Following the modern trend, wider tire clearance.
A lugged fork, looks better and probably rides better.
Two bosses on the fork so you can use cages there (nice option, another modern trend)
I still don't think its worth 'upgrading' though, (and he doesn't seem to either). Imo the only really tangible upgrade would be a dynamo setup.
