carbon is strong when used exactly as intended, but has to be somewhat babied at times, for example just sitting down on the top tube of a carbon road bike can break it
touring rigs are going to be heavy anyways, with the possible exception of some ultra light bikepacking setups, so the weight savings from carbon don't really matter
