That said:
#1 you can do to make your life easier: Friction shifters. Get some bar ends. No more dicking around when the cables stretch over time or the shifters get knocked a wee bit out of alignment.
Alternatively, eliminate gears entirely. If you want true minimal maintenance, I'd go with a single speed, belt-drive bike. Cable-pull disc brakes, because v-brakes suck and cantis can be tricky to set up, and now you don't have to worry if your wheels are a little out of true.
Goes without saying that you want a rigid frame and fork - no suspension.
A beefy tire like a Marathon Plus or Marathon GT. Don't bother with "thorn proof" tubes - they're worthless. If a sharp object penetrates your tire casing, no special tube is going to prevent you from getting a flat.

Both "cheap" Shimano IGHs and the $$$$$$$ Rohloff require periodic oil changes - at least yearly, and more if you ride a lot. They also require an oil change after a few hundred kms of break-in riding. Neglect the oil change schedule, and your expensive hub will mulch itself in relatively short order.
