If you're limited to Europe, then some good ideas are to stick with DB services, or for you journey to start or end in Germany.
I took the 11 hour journey from Berlin to London via Köln and Brussels. All trains were comfortable, with great views and the Eurostar is an experience I can't believe I never had before.
There's also a number of named Inter City and Euro City trains in Germany which go to some interesting places. I took the Königssee which went from Hamburg to Berchtesgaden which was a 13 hour journey. There are also trains from Hamburg to Prague, Budapest, Copenhagen and so on. Berlin has the same trains going to Eastern Europe, but with the addition of the train to Warsaw, as well as a train to Malmö. Bonus if you want to take the Paris-Berlin-Warsaw-Minsk-Moscow train.
