Tires are imo the single most important component of a bicycle, because they contribute to speed, comfort, enjoyment and safety.
Wheels are the place where weight matters the most and aero wheels do make a difference at speed. More expensive hubs have significantly better longevity.
There is a surprising difference between some frames and forks, and a good frameset really does make a good ride.
Shimano groupsets past a certain point are all high quality, but going up the number of speeds can give you greater gear range, which is extremely beneficial or closer steps between gears, which is important if you're serious about riding.
Higher end groups also deliver better braking, are marginally lighter, marginally stiffer and more durable to ultegra level.
You might say that stems and posts are irrelevant, but they can be a cheap place to cut weight, the post contributes to comfort and a cheap stem might flex when you throw the bike around.
Good cables are extremely important, but a well cabled bike is most important. Brake pads are worth spending money on.
