You *can* do this, but it requires that you have your saddle offset backwards and slammed backwards to achieve a good body position.
You don't need to be like a pro and have a 7-9 inch saddle-to-bar drop, but having your bars up that high while also trying to put out power on a road bike is basically asking for back and saddle discomfort.
Why?
Upright positions on a road bike place weight on the saddle and deload the shoulders while loading the lumbar.
Assuming that saddle is at the right height for you (I'd be inclined to think you have it up to inches lower than you would really need it on the road, coming from a mountain bike), even slamming your stem would result in only a 2-3 inch drop from saddle to bars.
It's better to scoot your seat forward and drop your bars, basically, than to scoot it back and have high bars.
