How do people even get punctures? I always run my tires at recommended psi and keep my eyes open for debris on the road but I've never ever had a puncture.

I had shitty worn out tires (Helis vera corsa) once, punctured verry often.
Switched to 25mm GP4000S II and not a single puncture the whole season.
Lower pressure also helps a lot.

GP4000SII is hardly a puncture resistant tire. It's just a decent overall tire, is all.

I went down in pressure a lot, I was going 9 bar on my old worn out 25mm ones, now I never go above 4 bar.
Hell, most of the time just 2 bar or even less.
(don't do that if you are not a verry light rider)
