It sounds hella dumb for gravel/adventure biking. You're gonna hate the lack of low gears when you're pushwacking up a steep fire road while gear'd up for an overnighter.
40-11 is a pretty low top gear. I roll with 44-11, and even that is low enough that I'll spin out pretty regularly. And frankly, I'm not particularly fast.

The shitty gaps between gears are kinda-acceptable for adventure/bikepacking stuff or wyobraska-style gravel cycling.

And for reference, a 1x setup with a 10-42 cassette will have about as much gear range as that 50/34 x 11-28. So OP's proposed setup is pretty tight.
