Spain and the Spanish were great, but when I got to France it got even better. They respect cyclists. I was planning on following La Velodyssee, a 1200km cycle path from the border of Spain to Roscoff, where I got the ferry, but in the end it was so clogged with dawdling tourists and it wound through every park, cafe, restaurant, campsite, beach, toilet and attraction in the way that I just went on the roads. The cars were super respectful, and the further I got from the tourist region the better it got.
As for time, being able to afford it...I think a lot of people use it as an excuse. Not that you are. But you'll adapt your spending to suit your budget. On that Spain/France trip I was spending about €5-6 a day, average, and I wasn't being super careful.
