I've ridden plenty of aluminium and carbon rims with them including but not limited to Boras, Zipp 404s, Shamal Milles, Farsports, and Light Bicycle. Braking on all of them feels like ass when compared to my commuter with RS505. I've also tried the latest Dura Ace brakes and they feel just as bad compared to discs. If you think rim brakes, especially with carbon rims, is anywhere near discs in terms of braking feel you've never ridden good disc brakes.
Now I'm not saying rim brakes are unusable, if I was my roadie wouldn't have them. They just aren't anywhere near discs in terms of brake feel, or power. And I'm not telling you have to buy a disc brake bike. If you're fine with rim brakes or into extreme weight weenieism then they're certainly an option.
Let's not even mention the maintenance. Once set the disc brakes are pretty much maintenance free. Rim brakes are a constant fiddle when you change wheels or just use carbon rims because the carbon brake pads are so soft they wear super fast.
Also pros ride what their sponsors want them to ride. And they're super set in their ways and don't like anything to change. Using them as an excuse/example for doing anything in cycling is bad.
