because calipers are more aerodynamic, and they already exist as a mass market item
mini v brakes for 700 c wheels are more of edge case product - most are for flat bar road bikes or cyclocross
besides all that road bikes have disk brakes now lol

I think using rim brakes on carbon wheels is asking for trouble. Disc brakes on 99% carbon bikes is the future.

maybe on the top end $10k+ bikes in small frame sizes

Pic related is how you get modulation on v brakes, along with Kool stop dual compound pads.

Go Avid SD7 brakes with SD7 levers or Tektro long pull drop levers. Mini V is harder to get working smoothly with drop bars and the only easy way to consistently get good modulation there is with short pull levers imho
