On Vanilla, I think all industries always produce, so you just haul things from A to B, then come back empty.
You will also often want to bring and transfer cargo from multiple industries of same type (e.g. Copper Ore from Mines) in area to a single station with road vehicles, to load it all from single point onto a train and deliver to destination.
With FIRS and custom trainset, do as above, but only primary industries produce, so you deliver their cargo to secondary industries, which then start producing cargo you can further transport, e.g.
>Fishing Grounds -(Fish)-> >-(Fish)-> Fishing Harbour -(Food)->>-(Food)-> General Stores, Houses, Bulk TerminalIf you have NewGRF trains, it's likely you will be able to use same cargo wagon for multiple cargo types, by refitting it, e.g. using tanker to transport Water, Milk, Alcohol, Oil, and Chemicals. You can do that by clicking the Refit button in the order list, having some order selected.
Sometimes you need to refit vehicle after buying it, because it defaults to something else. In the 1.10 there will be a feature added, that will automatically refit vehicle to cargo filtered in the buying list.

For PAX you will often want to use Timetable (button on top of orders list), check what the buttons do when clicked with Ctrl, Start Date button lets you spread trains evenly on the timetable this way (something I learned just yesterday).
