It's still good exercise, especially for people who don't otherwise exercise. But yeah, pushing yourself to ultimate bike performance can make you look like Chris Froome, a complete skeleton with no upper body strength whatsoever.
Being a sprinter would be better in my opinion. Someone like Peter Sagan.
Also running is similar. Running really long distances is, again, unnatural. Humans did not evolve to run 26 miles at a time, non-stop, on hard concrete. This is probably why lots of people have problems with the impact of running on their joints.
Actually thinking about it more, maybe you're right that any exercise, taken to extremes, is unhealthy. I watched recently the video of Eddie Hall doing the world record 500 kg deadlift:

Normal weightlifting is fine though, as long as you're being sensible and doing it properly and not hurting yourself then it's absolutely healthy.
