I agree that we should automate most of it, though you can say that about virtually any modern job that doesn't require creativity, and even those get some automation efforts. No, jobs aren't automated because of muh regulations, it's because there's a technical barrier we're still trying to get over, plus the years old discussion of job automation that applies to any field ever.

Anyway, try learning a bit about how flight works if you're trying to wonder why you need infrastructure and air control to land thousands of "taxis" the size of a helicopter in narrow streets where people live. Remember what I said about societal conventions? Some don't want noisy helicopters in their neighborhood at 1am.
