What is the best kind of bike for a tall person. I'm 6'1 and most people can't mount my bike

A long reach high stack bike like a roubaix or a enduro road bike.

For someone your size its just an XL. At 6ft1 you are kind of between sizes but probably xl

Literally why the advice of why "tons on the used market" is worthless for me. All I ever see on craigslist is bikes for midgets. LBS is no better either. Doesn't do me a whole lot of good to try out a bike at the LBS either, since they are all too small for me and they won't order anything special in unless I'm for sure going to buy it.

I’m 193 cm and wear size 48 shoes. I fit fine on modern 58 cm road bikes, for old steel frames ~61 cm C-C seems to be the magic number.

The worst part of is, I'm not even that tall. I'll look up a bike and see that it has an XL frame or a frame that is supposed to fit me. Then go to the LBS and they only have 2 or 3 actual XL bikes in stock and none of them are anything I'm remotely interested in. Of course they can order xl bikes, but only if you're actually going to buy the fucker.

Bikes come in boxes partially assembled, the shop has to finish assembly and there isn’t a single factory that’s going to accept a non-warranty return of a bike. Dumbass.

"tall" is a rather vague description. you can be tall and have short legs but long torso and vice versa which strongly affects the geometry that would be a good fit for you. also you didnt specify use case. honestly you might have left your question at "what", the answers you would get would be about as much helpful.
