Jerseys will get smelly otherwise, and the dirt grime and dried sweat may even make them wear out faster.
Shorts will become a breeding ground for bacteria, raising the chance of getting infected saddle sores and other problems significantly, and also causing them to become unusable that much faster.
Socks will get smelly and make your feet itch, maybe you get athletes' foot because of them; I've *never* had athletes' foot and I ride anywhere from 100 to 250 miles a week, every week of the year.
You should even wash gloves every so often because they'll get smelly and be bacteria-ridden.
Some people even don't understand that you need to take a shower as soon as practical after every ride, unless it's just a few minutes. If it's just not possible logistically-speaking then you take something with you so you can clean up a little down there as soon as possible. Personal hygiene post-ride is the most important thing. If you neglect it then you significantly raise your chance of getting infected saddle sores.
