Moving the seat back will alter seat height, however, so you might need to drop your seatpost a fraction.
Dropping your seatpost will also have the same effect as raising your handlebars (or, put another way, to maintain control position, you raise and lower seat and bars together).
You've been cycling for a while so you obviously enjoy your bike. Get a fit from someone who knows what they're doing, not a quick LBS setup.
