I switched to hydro disc on my road bike 2 years ago and when I ride my antique now I feel like I have to go at baby speed because every stop needs to be timed several seconds in advance

Nothing made in 2010 is an antique. So what are you doing on your road bike that requires you to come to a screeching halt all the time? It's definitely not racing, because you'd be in the hospital with a broken everything if you were doing that in a group.

it doesn't need to be "all the time", it just needs to be a possibility, and yeah if I rode the way I can ride with a modern bike, but on my antique instead, I'd be in the hospital within a couple of weeks. hence why I have to go babby slow. I'm glad you're starting to get it

my shimano 600 dual pivots from 1991 are excellent

really don't leave much to be desired in terms of power or modulation

No, I'm definitely not getting anything. I can skid my tires with rim brakes, you must have some poor quality pads on your Force calipers if you really need to ride slower with them. Or maybe they're loaded up with debris and you've never taken the time to pick out the embedded aluminum and other detritus that they accumulate over time. Or maybe they're just aligned poorly. Rim brakes can exhibit poor performance for lots of reasons, and the only one that isn't attributed to user error is rain.

skidding your rear tyre isn't something to brag about... under any kind of heavy braking your weight will shift forward unweighting your rear wheel and making it exceptionally prone to lockup
skidding your front tyre is called going over the bars or sliding out. Your rear wheel will lift before your front wheel locks up

the mark of a good brake is being able to do a stoppie from high speeds in a short distance and to progressively approach that point so that it can be recovered from.

those who don't ride can just move right on

yeah. that might sound impressive if you have abysmally low standards, so if that's a good sign to you, then good on you for upgrading from whatever walmart trash you had before. but I'm discussing a different level of performance where control, response time, and modulation matters. that probably makes no sense from your frame of reference.

and like this is just not at all valid when you're talking about ROAD BIKES
Any disc road bike's rim equivalent for the same money is not going to be cheap or old rim brakes.

The compound of the brake pads are what matters, campy makes good brake calipers and just had an edgy track bike phase.

I own campy chorus and a cool thing I noticed was that it had dual pivot calipers in the front and side pull on the rear. More braking power is transfered to the front wheel when equal pressure is applied to the brake levers, mitigating rear wheel lockup.
