i've ridden a bunch of backcountry mtb type trails on tours. It's fun and can take you to really interesting places and you can camp isolated.
Panniers are fine but ortilebs DO rattle, the bottom hook rattles off, bungey hook style attachment panniers also rattle off.
Racks also break.
I fasten my panniers with extra straps/bungeys if it's really rough.
and if you clip an ortileb pannier riding single track or you put the bike down, the hooks snap off the rails. Fixable with a zip tie but yeah.
My setup is panniers too and i also don't intend to change but cmon lad. There are pluses and minuses of either.
