anyway the low hanging fruit are the kickstand, the reflectors, and the spoke protector behind the cassette

If your chain rings are bolted to your crank you could remove the inner and outer one and your front derailer and front shifter pretty easily, but i bet they are riveted together, in which case, no.
You could also remove a brake.

I tried to but my image size is always too big, idk how you get around that without having to use some image compressor.

Reflectors are pretty good things to have though, if you ever ride at night around cars. Removing the spoke protector hardly seems worth the effort it takes to do it. Kickstand can also come in handy occasionally.

If you want to go minimalism you don't start with full suspension. You do this >>1615689

also you can get a spoke protector off just by attak it with pliers. You don't have to remove the cassette or even the wheel

Those kinds of bikes are not meant for that. Or really anything beyond parting idiots with money and then inflicting suffering on those who buy them second hand. You should sell it onto some unsuspecting soul and get anything with no rear suspension, that immediately simplifies it with no downsides.
If your city is flat, you can get away with a singlespeed, it's as simple as it gets.

Reflectors are weak. Get yourself some power lights (front and rear) that are capable of flashing. No cager is not going to see you if your rear light lights up the fucking street.

Double yes. Spoke reflectors absolutely fuck up the tru of the wheel. The centrifugal force pushes the reflector outwards towards the rim, messing up the tension of the spokes

pay attention to the condition of the pivots and washers around the rear coil over / spring
cast the twist shifters into the fires of hell where they belong, friction thumb shifters are preferable
replace the brake levers when they inevitably snap in half
replace the brake arms when their bushings wear out

remove the FD for peak minimalism
convert to single speed by using the limit screws on the RD
never lubricate any part of the suspension, leave it outdoors till the rust disables the motion

the "remove your spoke protector" meme needs to die. I've shifted between the cassette and the spokes at 10mph and it = instant rear wheel lock, pedals lock, wheel destroyed. Can't imagine doing it at high speeds and near cars
