Probably the most interesting stand up bike I found while searching was this thing called a Steptwin. Basically the pedaling is fully independent from one leg to the other. It uses strings for each pedal instead of a chain. You can pedal fully with just one leg. Or both legs simultaneously like you're stomping down. Or one after the other similar to a stepper bike. It's also cheap as fuck. Unfortunately it's an indiego project and supposedly they're delayed from coronavirus. Who knows what will happen.
