Mostly it's from a change in shoe construction. Cycling shoes have a stiff/very stiff nylon or carbon fiber sole plate/shank. It's the part you see on road shoes, but mountain shoes have it too, under the rubber sole.
If you've ever rode a bike wearing boots (winter commuting, etc), you've likely experienced the same effect.

On fixed, it's even easier to clip in the first time around. Partly because the first stroke has quite a bit of resistance ("you're in the wrong gear"), and partly because you automatically carry through bdc.
But really, why unclip when you can track stand, and make cagers seethe. You wouldn't believe how many think there's some "law" requiring cyclists to put a foot down, indicating they've stopped...
