I'm not sure how this works in other places but judging from the constant news of workers complaining I assume it's the same everywhere.
In my country, this is literally the worst full time job you can have, verging on the illegal. You will be paid OVER the median wage every month even if you don't go over 40h per week, and that gives people the illusion that they found a pot of gold. However, because it is not properly regulated, the way it works is that you pay a huge percentage on tax on every delivery, and that's on top of the company fees. All of these are due at the end of the year, not at the time you get paid. And of course there is no holiday pay or insurance. All this means at the end of the year, assuming you don't take a single day off nor any vacation day, you will not even get close to minimum wage for a basic job with a proper contract, and will be way below the poverty line.
This is why you only see illegal immigrants doing Ubereats in Europe and they only do it for a year at most - no one else is willing to do it.
If you're just looking for a weekend job to make a little bit on the side while you ride your bike, it might be a good option though
