I keep components organized either by complete group sets or in the case of odd parts by component type, eg brake levers, cranks, cassettes etc.These are all stored in stackable plastic containers with lids and are clearly labelled. I tend to wrap each individual component in clingfilm and label them, eg - DX M650 rear Derailleur.
I keep wheelsets and tyres in pairs, I use two parallel broom handles spanning across the gap between 2 shelving units and secured with screws that stop them rolling but allow me to easily lift each end, with wheels hanging from them alternating between the poles to maximize storage space, single/spare wheels/tyres I store separately onsimilar hanger set ups.
Assembled bikes I simply remove pedals, rotate bars 90 degrees and line up close together with rear wheels supported in bike stands.
It really makes life easy if you can keep everyting tidy and organized, I neer have to hunt for anything, everything is in the right place and the most work I have to do to reach something is remove a few stacked plastic boxes to access the one I need. It requires discipline though, I put everything back in the correct place as soon as I finished with it, it also helps to plan your work and set yourself up before you begin, so for example today I'm prepping a frame for touching in, so I set up the bike workstand with the frame, placed the fork next to it hanging from a beam, took out the dremel and sanding attachments, wet and dry paper of appropriate grits, some clean cloths and rags, WD40, rubbing alcohol, acid etch primer and brushes, white spirits etc. Basically everything I'll need for that job.
