If everybody boarding an airplane was over a certain weight category (>300lbs) would there be reason of concern?

Nope, just reduce the total seats by 33%, make them 33% larger each, and increase the price accordingly. Or whatever works.
It's when not everyone is big you get this problem, making seats for outliers is troublesome.

Don't think it would change that much for the weight of the plane though, since muscle is denser than fat, buff guys tend to weight as much as an obese person.
