Purchasing a used bike between $500-800.

My choices are a Charge Cooker, Polygon Xtrada 5, and Trek Marlin 5.

they are all lego, made out of standard components, look at the quality of those components and also the fit of the bike itself and decide

Up to a point. When it comes to frames, you'll want a manufacturer of repute.
