Is there really a difference between mountain bike and road bike components? If so, what are the differences?

I’m restoring a hybrid/commuter bike. Stripped it to the frame and now it’s time to start putting new parts on it. However, I’m not really sure what to put on it and since it’s a hybrid, I could see the argument being made for either road or mountain bike parts for it.

Pure road components have higher gearing than mtb in order to go faster on tarmac, since you're looking for a hybrid/commuter setup I would gravitate towards road components.
A compact road crankset (50-34) will serve you well on urban roads, if you do a lot of steep climbing you can mount a cassette with more teeth in the lower gears. Alternatively there's cyclocross oriented gearing which typically has a single chainring up front, like in the pic.

lookie here, we have a bullshitmancer in the thread
absolutely nothing stops you from kitting your bike out in cheaper and sturdier mtb kit, but then throwing a meaty 52 on the front and having that highway gearing
and you don't even have to pay fred tax for that, since minibikes and folders with tiny wheels exist and want to have usable gear ratios too you can raid their parts bin

I wouldn't say mtb groupsets are sturdier, they're about the same maintenance wise. Mtb cassettes can be a good addition if someone does a lot of climbing or packs more load, some road cyclists also use mtb brakes.
What OP should get at the minimum is a road or cyclocross crankset + corresponding derailleurs, the other stuff can be swapped for mtb components.

depends on the year
road bikes mostly have
narrower chain line .eg 46 mm
shorter bb spindle length .eg 118 or less
narrower chain now called 6-7-8 speed compatible, mtb caught up somewhat
chain rings and cassette sprockets closer together
shorter free-hub body .eg 30 mm
narrower hub spacing .eg 126 or 130
different shift index points
lots of them have crank sets with PCD 130 mm x5 (CC 76.4) 38 tooth minimum
road frames have less tire clearance but also less clearance around the crank and chain rings
road bikes also tend to have brake levers that are not linear pull

but none of this matters
hybrid's mostly use MTB parts

MTB parts are made to be compatible with other MTB parts and roads parts are compatible with other road parts, so you're really looking at a bike that is kitted out quite differently depending on what you choose.
