It's beautiful. Restoring it would be a great project. Just note the frame is low end columbus tubing (cromor) so it won't be that valuable, despite the cool lugwork and paint. The only part that's worth money is the seatpost. Parting the bike out would imo be outrageous as it's complete.
Restoration will be moderately expensive/difficult because campag meme sizes for everything. Like, if you need new cones for the hubs, they will be very hard to find. Likewise with a new bottom bracket.
Judging by the profiling on the chainring teeth and the paint, I would actually guess the bike has not been ridden that much, so is a very good candidate for a restoration really, it's mostly mother time doing a number on it.
If you're actually going to ride it, I would suggest upgrading the front brake caliper.
tldr: very fun project, very aesthetic bike, but if you're just looking for a good classic rider then a 90s bike with tricolour on it would work better and be easier/cheaper to restore.
