Most parts, even back to the 70s, on a japanese bike are relatively generic, and such bikes can easily be rebuilt with modern parts.
It's certainly not hard to find freewheels (shimano tourney for fucks sake) or brake pads, which don't need to be 'period' infact, shouldn't be. And replacing brake hoods is just a nonsense thing, when if you wanted, you can upgrade the levers to something new, cheaply, and it's better.
Wheels as well. It's not hard to find 27" rims or tires or old wheels. The larger point is that it's not worth replacing all the components on a totally worn out old low end bike for a person who doesn't have a large parts bin, simply because it's not cost effective. But the parts do exist, and restoring something that has been done a number by mother time rather than hard riding, is well worthwhile.
