Let's say I'm not interested in cycling as a sport at all. I just like the idea of effortless and peacefully riding to places as a mean of transportation.
But how do you people approach JustRiding™ without looking out of place or being noticed so much?

But honestly, you need to simply not give a fuck. I have social anxiety as well, but I just always take the safety-green pill stay based while cycling. Take the full lane, make the cars your bitch. Wear bright clothing, nod your head at other cyclists.

Being noticed is in your best interest while cycling, if someone is paying attention to you, they won't kill you with their car (usually). Just try not to worry about it, people will only think about you for the few seconds they see you and you'll just be "guy on bike" for those few seconds.

There's nothing "to do" to look normal on a bike, just like there's nothing normal to do walking around. If you can't figure that out, no pro-tip from 4chan will help you out. You're right about the professional help thing, in USA it's a nightmare to try and get help. But it's like, it's a bicycle man if that's your barrier then there is a bigger issue underneath everything you need to fix first.

Or dont wear a helmet. Because cops literally dont see cyclists as a source of revenue. And if all you're doing is commuting that styrofoam hat will make next to zero difference in the unfortunate but statistically extremely rare event you do get hit.

Just know that people in cars are not looking for cyclists and unless you're doing something flagrant that gets their attention they will barely notice you at all.

As for the anxiety I have that too and wearing headphones at a low volume so you can still hear traffic around you might help. Yes thats slightly dangerous but its something the police generally do not enforce since again its not a revenue source for them.

OP, I think this is one situation where you can't really fix anything without changing yourself.
Just ride and you will inevitably have to cope with much bigger issues like goatheads popping tubes, edge traps, general shit road conditions, nonexistent bicycle lanes, rain, car drivers that don't give a fuck (it's easy to confuse their behavior for noticing but actively hating you, they just don't do either), bicycling with a transport connection and having a bus that runs every 30 minutes come with two bicycle mount spots already taken, like, there's so much shit that goes wrong, that thinking about people that judge you is a problem that is triple digits down in priority.

yeah it bothers me sometimes too
when i was buying a bicycle earlier this year i was looking for something that wasn't too attention grabbing and had written off drop bars for this reason but eventually when i did get a road bike i realized its actually kinda lowkey compared to mtb (a lot of those here) with their big tyres and shocks
i mostly also only go early in the morning to avoid people

I was social anxious too, realized it was a problem and to "treat it" i bought a skateboard, allways liked the sport, and started to practice, putted in my head that "fail is normal, i will fall in front of someone, i will get up, try again and fall again". Some weeks of practice in the local bowl i was immune of what people thinked and started to laugh every time i fell, it is really only a matter to get used to it.
