celestial navigation is still taught for merchant marine captains and there are how to books if that´s all you want to learn. However a regular sextant is useless on a plane, you need one with an artificial horizon adjustment to correct for altitude.

not to mention what's also needed is an aircraft with some kind of viewing port above the fuselage so you can get a line on the sun or stars. Won't work from any airline seat.

This is a lost art in the Air Force. No technical schools teach it and milGPS has completely replaced the skill. The sextant ports are still on KC-135s, B-52s, and old C-5s but C-17s, new C-130s, and all others don't even have the capability to accept a sextant.

I'd assume the door wouldn't open if the cabin is pressurized to prevent somebody from doing exactly this.
