These programs typically just have them partner through a flight school operating under part 141 regs (as opposed to part 61 which is a more mom-and-pop type of flight schools or independent CFI's). If you can I would recommend taking at least a few flights on your own dime first if you haven't already just to be sure this is what you want to focus on.
Choosing a school is more about where you want to do it than anything else. At the end of the day you'll get to commercial/CFI with more or less the same knowledge and there isn't anything noteworthy that makes any school stand out. As for a degree, all the legacies/major prefer one but it is not a requirement. Doesn't matter what it's in either, you either have one or you don't. Regionals currently don't care at all and places like Spirit might not either depending on the pilot market. But things in this industry can change fast and nothing is ever a guarantee.
