I agree with you. Re-spacing an axle and dishing a wheel is not an easy task. It's doable with minimal skill and patience but it's not someone's first project.
It's kind of besides the point though. Most wheels don't have threaded hubs, especially not most nice wheels. A far far easier SS conversion is on a cassette hub, because you don't need to dish or space it to get chainline, you can just move spacers around on the freehub, and you can just buy a spacer kit or get spacers and cogs from old cassettes or make spacers from a pipe. Converting a cassette wheel to SS is an easy project.
Threaded conversions just look cleaner and are a good use of threaded wheels.
