There are plenty of classic sport-touring bikes that don't have many bosses and 'can't support loads'.
Nonetheless, they still make fine bikes for touring on, just with bags and minimal gear, which was hugely a thing with carradice etc, before 'bikepacking' and with bikepacking bags the bikes you mention would fit the exact same niche, just like how people even tour on pure road bikes.
That's also not the main part of the gravel market.
The flagship Grabel bikes from the big 4- Checkpoint, Diverge, Topstone and Revolt all have rear rack and midfork bosses.
Half the marketing jargon and segment mythos is about 'adventuring' and 'exploring'.
