How viable is this setup?.
You realistically only need a wheel with a flip flop hub and two cranks to pull it up, right?
It should make you go faster on flat and painfully slow uphill I assume.

Carbon having some degree of flex and deflection compliance (not so much tension or compression) means these bent seatstays on modern road bikes act as rudimentary shock absorbers. If they went straight up they'd have to compress to absorb shocks, but carbon doesn't like to compress therefore you wouldn't get any shock absorption.
