I also have issues with noise and lights so being able to cover my head a bit and ear plugs can help. At least on the Capital Limited I noticed a lot of people with a little booze to help them sleep.
Food is expensive on the train, I typically bring everything unless I am on a sleeper route where the meals are in the cost of the room.
Do not expect wifi and intermittent connectivity because the train may go through some desolate spots. DL all the music and shows you want to consume on the ride.
Delays are always possible, look up some reviews for the route and see what's up. Some like the Late Shore Limited and the Texas Eagle typically arrive late due to freight traffic. However I still find it a really low stress way to travel if you have the time to.
