Because aircraft design came from a culture of military aviation.
When planes are being shot at it, there are a bunch of emergency situations that need to be controlled and accounted for. Like, say, your oxygen-generation system catches fire and smoke is venting into the cockpit/cabin.
In civil aviation, yeah, maybe change that switch to something with a cover that firmly holds it in the correct position and an alarm that sounds constantly when opened/changed.

Every airplane that I can think of has a manual toggle. It is the pilot's fault for not running their checklist.

I was under the impression they just set the landing altitude and left it at that. Surely you'd only need to put it on manual mode if something really fucked up.

the plane had an alarm to warn the pilots that it wasn't pressurized, but in a fit of incredibly good thinking by boeing engineers they decided to make it use the same sound as the takeoff configuration warning. (something the pilots would hear semi-regularly, unlike the cabin pressure warning which they could plausibly never encounter.)
so when the alarm went off and the pilots were already slowly being deprived of oxygen, they started looking around for what was causing a mistaken takeoff configuration warning when the plane was in the sky, rather than looking up at the pressurization system. all the while the plane kept climbing.
