Given the same area of land used for either any means of renewables that then fuel electric vehicles or livestock feed the renewables will easily come out on top. This is mostly because of the extremely poor efficiency of mammals doing work and of course the wheel. But also because a horse needs maintenance joules even when not doing any work. If you do the math you'll find that, sadly, the 'electric bicycle' is actually easily more environmentally friendly than a real bicycle and needs less than 15k miles to completely offset its production, assuming a typical first world electeicity mix and standard western diet. Also theres the methane issue.
But the real problem is actually motorvehicles per se.
