vee brakes and cable disks are much better for going over the handle bars, at least when they are brand new.

that said yea its farely easy, only problem is having the correct spare pads on hand.

the springs can wear out and turn brittle (replace with new springs)
winding a tension screw too far binds up the adjustment barrel (run both springs way looser)
damaged nylon bushing (replace the entire brake) / extract one from another set of brakes.
bronze bushing too long for the post that its on (yes this is an thing)
fastening bolts too tight (ideally you torque them to spec if the bushings are the right length)
cable housing too short or too long or caught on something.
brake pads at the wrong angle, caught on tire on jammed on wheel rim.
