As to them going up everywhere, that can be just as bad. Roundabouts are ideal for medium traffic intersections with roughly equal volume in both directions or in the case of oblique angles.
If one direction is heavily biased, a roundabout can impede traffic for little benefit due to lack of cross-traffic using it; stop sign on the side roads work well here. High peak, low daily volume intersections are almost always best signalized. Low volume roads are served effectively by 4-way-stops since wait times are low.
Arterial crossings need to be grade separated. Cross traffic completely defeats the purpose of an arterial.
There is no one size fits all intersection.
