I'd imagine a headset would have to have really bad bearings for it to feel noticeably worse.

Knowing nothing - I assume it has to do with how protected the bearings are. If you have a badly designed/built headset, I'd imagine water could get into the bearings, causing significant wear and partial seizing of the steering

Sealed is sealed, more or less. The difference in quality between a standard cartridge bearing and an expensive one is so marginal.

Yeah. I buy King because they're a local company, and because I can be pretty confident that the headset will never fail. Their Cielo bikes are very nice, too. But these days there are plenty of people who are making cheaper headsets that are also very reliable.

Not really, provided you tightened your star nut and stem properly beforehand. They prevent water from getting into your steerer tube, I guess. Also from taking a chunk off of your chest if you crash and bang against it.

They keep your stem in place and ultimately your headset bearings as well. If you have an alloy steer tube and your stem bolts are over-torqued, it might not matter much for recreational road riding. It's pretty important anything with a carbon steer tube (which can be damaged if the stem bolts are overtorqued), anything with spacers above the stem, and mountain bikes of all stripes.

No. It's for setting the bearing preload, nothing else. If your stem is correctly torqued then there's nothing wrong with removing the top cap (other than the already mentioned risk of impalement and keeping crap out of the steerer tube).

Whether or not there is a better offering is a topic of debate; honestly when it comes to actual performance, it seems like boutique headsets are more jewelry than anything else.

That said, every bike I've had that can take a King has one, but I get them second-hand for about $40USD on the regular working at a used parts LBS.
