If you have little to no experience find a second hand sit on top. They can be found cheap, they're harder to tip, they don't fill and sink so you can fuck up and not lose the thing.
It will also give you a good feel for I'd you like it and what you want in a kayak.
I grabbed a huge Bic 3 seater sit on top because it was $125 and down the street from me. I learned that I need something smaller so I can get it on and off of my van and that I like sit on tops.
