If you're toting in a couple jerry cans, premix and run off that.
If you're depending on stopping at gas stations to top off, now you're mixing/metering at the pump... not impossible, but ... personally I'd rather just fill it up and go. >pic related, don't even need to get off the bike.
Mechanically, there's less to go wrong in a 2t motor. Pipes are a little more prone to damage since they're exposed, but short of a major impact to it it'll still be rideable (you'll lose top-end speed as the volume goes down).
Power delivery can be peaky, and you usually need to wind it up a bit before it starts making power - can't lug it around like a big thumper.
Oil-injection's a thing on sleds, but not so big on bikes. You're probably going to be premixing.

Had that bike for a while now, and love it. As much as I'd love to step up to a 500 XC-W for the fuel-injection, they're just not worth the money to me right now when I've got a well-set-up 525 already.
