I'm only the son of a geologist, meaning I've heard him ramble about geomorphology most of my life. If something is steep, it's because nothing is making it come down. Rocks are eroded by 3 means : wind, water and the cold. Erosion via cold is when water gets into cracks in the rock, freeze and split the rock up. The cracks are caused by the formation moving and fracturing.
That gorge seems to have steep sides, which probably means it had a lot of water working on it, but not enough fracturing to cause a lot of frost erosion.
