Slowly remove the skin from the body (a small sharp knife is really helpful for this). If the animal is female, be careful to remove mammary tissue as well, as this can be difficult to remove later. If you want to dress the animal, rabbits are simple...cut open the abdominal pouch and pull all the guts out, cut the intestine and anus out, and repeat for the chest cavity. Make sure to check the organs for signs of sickness.
