making the wheels kinda irrelevant.
If lugging it out of your truck isn't an option, (as the kids are too young to help) you could always just leave it in there,
using the tail-gate as an additional work surface.
Or maybe make a smaller one exclusively for cooking gear and another larger one down the line as a general
camping patrol box when the kids get older? Building it would also be a fun project to do with the kids and a way
to teach them proper tool use.
