>>1393992There's a few reasons, probably more I can think of here.
- The gut cavity has the highest concentration of bacteria, if left in place this will make the rest of the animal spoil much quicker
- You want the animal to get cooled down as fast as possible after death to help keep the meat fresh, with the guts out of the way and a stick wedging the abdomen open while hanging air can freely pass in the gut and out the pelvis cavity
- The gut contents isn't that tasty apart from the heart, liver, kidneys and caul fat
- The guts can be placed downwind of your kill in a visible spot as predators will generally feed on organ meat before the rest of the carcass. This helps stop bears etc getting the drop on you.
- Removing the guts makes the animal alot lighter and easier to carry
