It's heavy, it corrodes and oxidises, reactive with a number of chemicals found in the wild, and most importantly it's soft as fuck. Meaning, the knife will never remain sharp, barely cut through warm butter, and any handle you fix to the shaft will ultimately bend the knife in use.
I hope for your sakes that no one ever relies on a copper knife in a survival situation.
