You should really only do this if you want to dedicate some serious trip time to photography. Otherwise, there's not really much to be gained from using a DSLR for simple snapshots when a compact camera will get the job done *almost* as well, for the snapshots anyway.
Don't worry too much about weatherproofness (I see your OP picture has a waterproof camera). It's really easy to keep pocket cameras dry when hiking, and weatherproof cameras tend to make sacrifices in regards to zoom capabilities, so that means you'll never take a worthwhile picture of wildlife with one unless it's right in front of you.
