>What is the taste like?They are very much like water chestnuts in lots of ways. They have a very mild flavor. I'll be digging up some again now that there's been frost a few times. The flavor is supposed to be nuttier and sweeter after a couple good frosts. I'll be making a stew with sunchokes I've dug up recently. Hopefully, the dehydrated ones will work well for grinding into a powder to use for thickening and other things like soup/stew packets to add to pasta, ramen, or whatever.
